When I think summer food, I think of light meals that can cook quickly on the grill, and that are full of flavor. My favorite sandwich for the occasion is this Hawaiian chicken sandwich with grilled pineapple. Yes, that’s right… a Hawaiian chicken sandwich with grilled pineapple!

It’s super simple to make, and is as great for a large summer party as it is weeknight meal.

Ingredients

  • Boneless skinless chicken breasts
  • Fresh pineapple
  • Lawry’s Teriyaki with Pineapple Juice Marinade or Lawry’s Hawaiian Marinade (both marinades are essentially the same flavor)
  • Provolone cheese
  • Mayonnaise (or Miracle Whip)
  • Honey
  • Salt
  • Pepper
  • Garlic powder
  • Hamburger buns

Directions

Depending on the size of your chicken breast, I recommend pounding the chicken breast out evenly until it’s about half an inch thick, and halving the breast so that it’s big enough to fit on a bun.

Season your chicken breast with salt, pepper, and garlic powder.

Marinade the chicken breast in Lawry’s Marinade for about half an hour in a plastic bag. If you are in a rush, you can skip the marinade process and just use the marinade as a sauce after you cook.

Heat up your grill on medium high heat, until it reaches about 375-400 degrees.

Lightly oil your grill.

Cook the chicken breast about 6-8 minutes per side until your chicken has an internal temperature of 165 degrees (check with a digital instant read thermometer.)

When your chicken is almost done cooking, slice your pineapple in about quarter inch thick slices. Toss the pineapple on the grill and cook on both sides.

While the pineapple is cooking on the second side after you flip it, lightly coat the pineapple with some honey. Note: if you apply the honey before cooking the pineapple, they honey might burn. It should only take about 1-2 minutes a side to cook your pineapple.

When the chicken is done cooking, brush chicken with additional marinade on both sides.

Then top the chicken with provolone cheese (ideally two slices!) and let it melt while on the grill.

Lightly toast your buns on the grill.

Then when everything is cooked, assemble sandwich. I recommend adding some mayo on your buns, and if you wish, add some lettuce!
